The writer is refering to sounds.
To hiss is to make a sound with lots of Ss. Snakes hiss. Tires quickly losing air hiss. Bullets nearby hiss. Angry cats hiss.
To spit can be actually eject spit from the mouth, to violently eject others things, to make a sound like someone spitting, etc. Angry mothers-in-law spit words. Machine guns spit bullets. When drops of water touch hot stoves, the stoves spit, making spitting sounds. Yes, even cats make spitting sounds when upset.
