True, "to scoop out" is a phrase.  But not in this sentence.  Let's simplify the sentence.

to pry (to force something, coerce)
a little
series-finale (the last episode in a series)
scoop = news or information that nobody else has yet
out of him him in the process
to pry a little series-finale scoop out of him in the process = to force (coerce) out of him in the process information or news nobody else has yet about the final episode of a the series
