Indeed, the Collins Portuguese Dictionary, says that one can be an impersonal way of saying something (in other words, it generalizes, say that something applies to everyone and someone). In Portuguese it would be close to a "sujeito oculto"
The given examples there: One never knows - nunca se sabe.
To cut one´s fingers - cortar o dedo.
One needs to eat - é preciso comer.
So the translation could be "alguém" or simply use 0 (zero) translation.

 

 

Thus, we could have:

...to chose one's attitude in any given set of circumtances.

...escolher a atitude em qualquer circunstância.
