    I think that chunk here could be a noteworthy quantity or part (in that case, of language), it has more to do 'structures' than to collocations.  Learning these 'pieces of language' allow us to get acquainted with the way they speak English.

    Collocations would be the words that are likely to come immediatelly near to a main word, being after or before that main word.

    

    So, the study of of chunks is in a macro level, and collocations more in terms of micro.
