  My two pence´s worth, tough it is already impecably explained above by these guys.


  In other words, the ON indicates "at some time during a particular season".

  That is, within a sub-set of a season, hence:


on summer holidays (a sub-group from summer, the holidays within the summer), we drive on rural roads.
on winter days (ditto, to winter), I will carefully on snow covered roads
on spring nights (the same reasoning applies here), I look at the stars




 Like Dale stated, the subgroup part "adjectives'' the season.
