Mensagem: 

I was talking to an australian friend and she said: "I used to teach English as a second Language. You could have come to Sydney and I would be your teacher."

Nothing wrong  with "you could have come" in my humble opinion. Já que ela não ensina mais, ela quis dizer que se você "tivesse ido" , ela teria sido a sua professora.

Could come  quer dizer "podia vir" mas já que ela não ensina mais , what´s the point?

O que está errado,sim,  é ela dizer "I would be your teacher" já que devia ter dito: I would have been  your teacher.
