Essentially "go shopping" is meant in general "ir fazer compras" while "do shopping" means a planned activity or a task " "fazer as compras/comprar".
That is, when you just go out and look for something to buy, you "go shopping" (it doesn´t necessarily means you will actually buy something).
Whereas if you "do the shopping" you do the chore, the task. Perhaps you did the shopping and other member of the family went to bank to pay the bill, or other member of the family did the driving, etc.
Anyway, the difference is subtle, though.
