Good question! Congrats on it.
Playing the piano would mean the act of playing the instrument and "playing the piano" as the ability of playing it.
So, both forms are acceptable then, though "playing piano" is more usual in American English, being used there with interchangeable meanings.
However, this form is in the Guardian (no less) in interviews with musicians, so musicians have a poetic licence of sorts to do that.
