'Environment' is a very broad term, and more permanent in time, meaning all of the physical surroundings - especially the earth, plants and animals; terra, flora, fauna.
'Ambient' is much more specific and short-term: it is frequently used for the temperature of air, for instance. Ambient air-temperature means that of the air surounding one at a particular time - in a room, for example. It is also used figuratively as in 'ambiance', the feeling or appearance of one's immediate surroundings in a place.
