To count heads/noses = To count people, participants, etc. 

Q-How many people are here at the party?

A-I don't know.  Let me count heads/noses.

 

Head-count = A count of people, participants, etc.  (I don't recall ever hearing "nose-count".)

Q-Did you get a head-count?

A-Yes, I did a head-count and counted 17 students on the bus. 

(Note that "bodies" is often used in counting, and the word is not restricted to cadavers!  "I counted 17 bodies on the bus." = "I counted 17 students on the bus." )
