Let's say you went in the bathroom and found the bathtub filling up with water and almost overflowing.  In a minute or two it would have started to spill out on the floor.  Your girlfriend was drawing you a bath and she forgot what she was doing.  You calmly reach out and turn off the spigot (tap) and the water stops.  You did it just in the nick of time!  You saved her from having to clean up a horrible mess and you didn't get in any trouble with the sindico about water going into the apartment downstairs.

At the eleventh hour means late in a process.  The lawyer filed an appeal to get the condemned man his freedom only three days before the scheduled execution.  Now the government can't execute the prisoner until the case has been reviewed by a judge in an appelate court.

This action wasn't "in the nick of time" because the lawyer had three more days to file the paperwork.  It was late in the timeline though (before midnight, so to speak....at the eleventh hour).

Make sense?
