As the product evolves, we expect to find and overcome technical problems.

as = while, during   While the product is evolving...  During the evolution of the product...

As long as the product evolves, we expect to find and overcome technical problems.

as = while, during

While the product is evolving...  During the evolution of the product...

Often "as long as" has quite a different use.

As long as it doesn't rain, I'll be happy.  =  I'll be happy unless it rains, until the time it starts to rain.

You'll be welcome as long as you don't drink all my beer. =  You'll be welcome until you drink all my beer.

As long as you're up, would you bring me a glass of water? = Since you are awake/not seated, would you bring me a glass of water?

You are welcome to stay here for as long as you want. = You are welcome to stay here until you wish to leave.

As far as the product evolves, we expect to find and overcome technical problems.

Here "as far as" is not being used correctly.

As far as I can tell...  = To the best of my knowledge, In my opinion, According to my observations...
