For the life of me I can't think of an over + verb structure for enrolar-se. I apologize for suggesting otherwise. I also think the original poster probably wanted a word other than enrolar-se.
Did you perchance mean "overwork"?
"My boss gave/assigned me a bit/lot more work than I could possibly handle/accomplish. He or she wants to overwork me."
