Assunto:  Bake vs roast
Mensagem:  Nowadays roasting is done in the oven on high heat; but in former times it was done over the open fire - "turned on the spit". So roasting is to sear the outside of food in very hot air, while baking is to cook it enclosed in less hot air. The first ovens were simply kettles set in the coals of a fire and covered. In baking the food cooks from the internal moisture and in roasting the moisture is rapidly driven out.
