I think you or me missed something.
When the definition has it that the stone is a "change or turn over" I think the concept is that you have a kind of kaleidoscope stuff, say, a shifting pattern. That is, when you are rolling the stone in the palm of your hand or between your fingers the stone in question is going shifting your color as well. This feature is exactly what gives inspiration for the horror films. The Draculas of life (no pun intended) shift your behavior because of the sun (when the sun appear, he hides and vice versa).
